About Freeze Drying Technology
Freeze-drying, known as lyophilization, is an ancient process for preserving and making perishable materials portable through freezing and pressure reduction to sublime water. It originated with 13th-century Andean Indians and was refined in the 1950s. Developed for blood plasma in World War II, it later expanded to consumer foods. Historical achievements include Albert Altmann’s 1890 freeze-drying of organs and a 1920s patent for rabies virus freeze-drying. The 1950s broadened applications to camping food. NASA used it for space food, notably freeze-dried ice cream on Apollo 7 and Gemini. Nestlé’s 1965 instant coffee made it mainstream. Aztecs and Eskimos early on preserved biological samples with similar methods.Contemporary freeze-drying freezes products in specialized chambers with heaters to form solid granules determined by chamber design.
Advantages include prolonged shelf life (7–8 times longer than fresh), nutritional preservation, cost savings, and convenience. Freeze-dried foods are nutritious, and dairy retains probiotics.
