Freeze-drying (lyophilization) is an age-old method for preserving and making perishables portable via freezing and sublimating water under reduced pressure. Dating to 13th-century Andean Indians, it became sophisticated in the 1950s. First developed for blood plasma in World War II, it later spread to consumer foods. Albert Altmann freeze-dried organs in 1890; 1920s patents included rabies virus freeze-drying. The 1950s broadened uses to camping food. NASA utilized it for space food, including iconic ice cream on Apollo and Gemini. Nestlé’s 1965 instant coffee launch mainstreamed it. Early uses by Aztecs and Eskimos preserved biological samples.
